Deceptively Delicious French Toast

Do you have trouble getting your kids to eat the right things? Isaiah has always been pretty good about eating everything I put on his high chair tray, but lately, I can tell he is getting more picky.

Here's a French Toast recipe from the book, Deceptively Delicious, which may help with the incredible task of feeding your families the right foods! (Thank you, Missy, for letting me borrow the book...I found it on the table at church yesterday and decided to take it home)
  • 4 large eggs

  • 2 tablespoons banana or pineapple or sweet potato or carrot or butternut squash puree or canned pumpkin

  • 1/4 teaspoon cinnamon

  • 4 slices whole-wheat bread

  • Nonstick cooking spray (Canola Oil is actually better for you!!)

  • 2 teaspoons trans-fat-free soft tub margarine spread (Use butter instead-the omega 3's cancel out the omega 6's, which makes it 'not bad' for you)

  • Pure Maple Syrup

  • Flaxseed Meal

  1. In a shallow bowl, whisk the eggs, puree, and cinnamon. Add the bread slices and turn them in the mixture to soak for 30 seconds to 1 minute.

  2. Coat a skillet with cooking spray and set it over medium-high heat. When the pan is hot, add the margarine. When the margarine sizzles, add the soaked breda slices (sprinkle with flaxseed if you like) and cook until golden brown on the outside, 2 to 3 minutes per side. Serve warm with syrup, confectioners' sugar, or fruit.
