This is one of the best salads I have ever had! It is so delicious and healthy! Thank you, Elaine, for sending me the recipe to share with all of our bloggers!
1 lb. of small pasta (orzo or ditalini...whole wheat will work)
1 large can of orange & grapefruit sections (you can use fresh also!)
1/2 cup of fresh mint leaves chopped.
salt & pepper to taste
Orange oil salad dressing:
1/2 cup of extra-virgin olive oil
1 orange zested
1/4 cup of white wine vinegar
juice of orange
Cook pasta according to package directions.
Let pasta cool
Toss in orange & grapefruit sections
Add orange oil salad dressing along with salt & pepper
Just before serving, sprinkle with fresh mint leaves

Oh yum I am not a grapfruit person but some oranges and maybe pineapples would be right up my alley! I will definitely give this a try. I have eaten loads of junk toay! Someone STOP ME!
