Something our family enjoyed last Saturday night was a concoction I made up:

1 package of whole wheat Gnocchi (I never even knew what this was until I moved to Youngstown)
4-5 Chopped mushrooms
Olive Oil
Chicken- cubed
Canned Tomatoes- I didn't have any fresh ones on hand
Italian Spices- get creative
Mozzarela Cheese
Boil Gnocchi- only takes two minutes or Gnocchi gets soggy
In separate pan, saute mushrooms, chicken (mine was already cooked from the day before), and tomatoes in Olive Oil
Add Spices
Drain Gnocch, add to pan and saute
Serve with Mozzarela Cheese sprinkled on top
Simple, yet really good! I wish I had a picture to show you!
